Chef Andrew Gruel is a Southern California culinary icon, with seafood restaurant Slapfish, chicken joint Two Birds and pineapple-free pizza place Big Parm under his umbrella. He’s had the Food Network spotlight on him for a while but he was thrust onto a different stage during the pandemic going after Governor Newsom. Chef and I discuss his spontaneous partnership with Barstool’s Dave Portnoy, his country-crisscrossing career that started in New Jersey, how social media helped launch his business and his family, living with anxiety, and the major changes he’s seen in society and the kitchen.
